Lily Cookies - Ferrell

Here is a good old fashioned cheesecake cookie recipe; quite simple to bake. At first I thought sugar was missing. Turns out, back in the day, this simple cookie dough did not have sugar added.

Some recipes do suggest the idea of adding a bit of sugar and a little vanilla to the dough. This recipe is a unique pinch cookie recipe with fewer ingredients than other types of pinch cookies.

The intent is to have the 3 ingredient cheesecake dough, with jam filling and a light dusting of powdered sugar. Often with Lily Cookies, the only sweet bit is the jam.

1 - 4 1/2 oz. pkg. cream cheese
1 - cup butter or shortening
2 - cups flour

Cream butter and cheese, add flour. Roll out and cut with 2" round cutter. Roll into cornucopia by bringing 2 rounded edges together, letting them overlap; press them gently; shape like a lily. Fill open part with a little jelly or orange marmalade. Bake at 375F about 15 minutes. Cool. Drench in powdered sugar.

If desired you may add a little sugar to the dough.

Nick Says: To finesse these, cut the dough into squares and fold 2 corners in. The point on the front of lily can be carefully cut and set decoratively into the middle of the jam for each cookie. The recipe says "jelly", but generally jam is used.
